When it's quiet, sending someone home early is the quickest way to cut costs. But on the day itself it hardly ever saves anything. If you cancel an on-call worker within the notice period (4 days by Dutch law, 24 hours under the hospitality collective agreement), you still owe wages for the scheduled hours. On-call contracts also carry a minimum of 3 hours' pay per call, and guaranteed hours are paid anyway. So your staff are there already. We work out for a bistro on a Tuesday evening what filling the empty tables earns you. This is an explanation, not legal advice: always check your own collective agreement.
